Hunter was born in Glenfield, Auckland, New Zealand. She has a rare blood disease, which limits her to some extent. She had ambitions to be a ballet dancer, which was curtailed because of the disease. Rachel first appeared on the television for an Ice Cream brand Advertisement, in 1985.

Hunter met rock star, Rod Stewart, at the age of 21, in a nightclub. He was twice her age. They married three months later and had 2 children together. After 9 years of marriage, they filed for divorce which was finalized on November 2, 2006.

She also had a year-long relationship with Canadian NHL Hockey player Sean Avery and later with another NHL player, Jarret Stoll, the mentor of her son Liam. Stoll proposed but called off the wedding 7 weeks earlier. Hunter began her modeling career at the age of 16. She modeled in Australia, New Zealand, and France.

She became the Tip Top Ice Cream face for New Zealand and the Trumpet Girl. She collected what came her way, endorsements, contracts, everything worth doing.

She appeared on the cover of Vogue Italia, Dutch’s Harper’s Bazaar and American and International editions of Elle. Hunter also posed for Playboy Magazine cover in 2004. She later signed to Ford Models in New York
